Hey guys!! Who can believe Thanksgiving is next week?!?!? I am so excited for all the great food and especially the pies!! I love to bake, it is actually one of my most favorite past times that have not been doing enough of lately! Each year we spend Thanksgiving with both my husband’s family and my family so it’s a FULL day of eating, fellowship and tradition and it’s truly my favorite holiday because it’s just a day to devote to spending time with the ones you love! This year is extra special with our own little turkey who just last year was a tiny little guy inside my belly (soooo crazy how fast time flies!)
Today I thought it would be so fun to share a couple family pie recipes with you all that are ALL super simple and fun! I like to take something to each house that I go to and pies are always so easy to travel with and make a great hostess gift! I am going to share an apple pie recipe that was my grandmothers, a coconut pie recipe that was my great grandmothers and then a pecan pie my family loves as well as an award winning chocolate chess pie from one of our local favorite restaurants here in Raleigh, The Angus Barn!
Grated Apple Pie (grandmother’s recipe):
2 cups grated apples (peeled) – I choose Granny Smith but any apple it great
1 cup sugar
1 Tablespoon of flour
1 egg
3/4 stick of margarine
Mix grated apples, sugar, flour and egg with a spatula. Pour into unbaked (regular size) pie crust. Melt margarine and pour over top. Bake at 250 degrees for approximately 45 minutes or until brown. Let pie set for a few hours to get to room temperature before cutting. Serve with vanilla ice cream 🙂
Coconut Pie (great-grandmothers recipe)
1 unbaked pie crust (regular)
1 cup milk
1 cup sugar
1 tsp. vanilla
2 tbsp. flour
2 eggs
1 cup shredded coconut (I buy finely shredded!)
dash salt
2 tbsp. margarin
Mix sugar and flour together and then mix in all other ingredients with a spatula. Bake at 350 degrees for approximately 30 minutes until brown and still slightly shaky! This recipe yields one regular crust pie! Let pie set until it reaches room temperature before cutting.
Award Winning Angus Barn Chocolate Chess Pie (my go-to!)
1 Unbaked Pie Crust
1 Stick Butter
2 Squares Bakers Chocolate (semi-sweet)
1 Cup Sugar
2 Eggs -beaten
1 tsp. vanilla
Dash Salt
Whipped Cream (optional!)
Melt butter and chocolate, mix with other ingredients which have been blended together. Pour into pie crust and bake 35 minutes at 350 degrees. Top with whipped cream (optional!)
Pecan Pie
1 cup Karo Light Corn Syrup
3 eggs
1 cup sugar
2 Tbsp., butter, melted
1 tsp. vanilla extract
1-1/2 cups pecans
1 unbaked 9 in deep dish pie crust
Preheat oven to 350 degrees. Prep time is only 5 minutes! Stir the first 5 ingredients thoroughly using a spoon. Mix in pecans. Pour into pie crust. Bake on center rack of oven for 60 to 70 minutes. Cool for 2 hours. Store pie in refrigerator.
